Pumpkin French Toast Bake Recipe

Nothing says the taste of fall better than pumpkin and maple syrup!  How fitting is it to start your morning meal with fall flavor?  Last Sunday, I was on the hunt for a breakfast/brunch recipe with a fall theme.  It didn’t take too long to stumble across a recipe for Pumpkin French Toast Bake!  To me, it sounded a lot like the way you make bread pudding, only healthier and suitable for breakfast.

I did tweak the recipe to fit our family’s taste and I’ll be honest, there’s hardly ever been a recipe I have left on its own. I’m always having to put my 2 cents into whatever I’m cooking and baking. It hasn’t failed me yet and this Pumpkin French Toast Bake will now be part of our fall Sunday breakfasts!

While my family first turned their noses up at the thought of Pumpkin French Toast Bake, they quickly changed their minds as they smelled it baking away in the oven. When I served it at the table Sunday morning, they were more than willing to sample this dish. I found it to be sweet enough on its own, but the rest of my family ate the Pumpkin French Toast Bake happily with a touch of maple syrup drizzled on top.

Ingredients
  • 1 loaf of whole grain bread
  • 1 (15 oz.) can pumpkin puree
  • 8 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tbsp sugar
  • 3 tsp cinnamon, divided
  • 1 tsp nutmeg
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • dash of salt
  • 3/4 cup old-fashioned oats
  • 2 tbsp maple sugar
  • 2 tbsp butter, softened
Instructions
  1. Preheat oven to 350. Grease 9×13 glass baking pan
  2. Slice loaf of bread into bite size cubes and place into greased baking pan.
  3. Beat the pumpkin puree, eggs, milk, vanilla extract, sugar, 2 tsp cinnamon, nutmeg, cloves, ginger, salt until well blended.
  4. Pour pumpkin mixture over cubed bread evenly, ensuring all pieces are soaked.
  5. Make the oatmeal streusel topping by mixing oatmeal, the remaining 1 tsp cinnamon, maple sugar, and butter.
  6. Sprinkle oatmeal streusel evenly over pumpkin coated bread cubes.
  7. Bake 30-40 minutes until french toast is baked through and top is golden brown.
