Holiday Baking With C&H Light
With the holidays, there is a lot of holiday baking going on! No need to feel deprived because you want to take part in the festivities and give in to your sweet tooth thanks to C&H Light. With half the calories of sugar, you won’t feel as guilty when you reach for the next holiday baked good made with C&H Light. I have been substituting C&H Light in many of my holiday recipes and no one has been able to detect the difference and have gotten rave reviews on my baked treats at that!
One of the holiday recipes that I subbed C&H Light for was sweet Yorkshire pudding. Sweet Yorkshire pudding is extremely easy and quick to make. When I get lazy to make pancakes or if it’s a special occasion, I tend to make this sweet Yorkshire pudding for breakfast or brunch or special occasion. Flour, butter, eggs, C&H Light, and milk are all you need to make this scrumptious breakfast food! It sure beats the tedious effort of making each pancake one by one on the griddle and it’s quickly become a family favorite!
Doesn’t it puff up all gorgeous like?! The C&H Light substitution doesn’t look like it affected the baking one bit. Oh, how we couldn’t wait to dig into this glorious puff pancake!
Topped with homemade blueberry sauce and whipped cream (also sweetened with C&H Light) and you can see why it’s easily one of my family’s favorite all time breakfast meals! It’s been nice to indulge in all the holiday sweets and treats without so much guilt. I hope you enjoy the Sweet Yorkshire Pudding Recipe with C&H Light that I’ve included in this post. - 1 stick (1/2 c.) butter
- 6 eggs
- ¼ c. C&H Light
- 1-1/2 c. flour
- 1-1/2 c. milk
- 4 c. frozen berries of choice
- 2 TBS lemon juice
- 2 TBS C&H Light
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ c. + 2 TBS water, divided
- 1 TBS cornstarch
- 1 pint (16 oz) heavy whipping cream
- 2 TBS C&H Light
- 1 tsp vanilla extract
- Preheat oven to 400. Melt stick of butter in 9×13″ baking pan.
- Whisk together flour and C&H Light in a small mixing bowl.
- In a blender or food processor, blend 6 eggs until mixed and frothy.
- Add flour/C&H Light mixture into eggs and blend until the batter is smooth.
- Once butter is completely melted in pan, pour the batter over the melted butter and place back in oven. Bake for 20-25 minutes until puffy and golden brown. !Berry Sauce
- Place frozen berries, lemon juice, C&H Light, vanilla extract, cinnamon, nutmeg, and ¼ cup of water into a medium saucepan. Cook on high until it boils and mash berries. Turn down heat to low.
- Make a slurry with the remaining 2 tbs of water and cornstarch. Stir into berry mixture and continue to cook until thickened.
- Add heavy whipping cream, C&H Light, and vanilla into mixing bowl and mix on high until thickened.
