Every year my husband requests that I bake him his favorite German Chocolate Cake. No boxed variety will do and the least I can do for him on his birthday for all the hard work he does in supporting our family is to bake a fresh, homemade cake of his choice for him. I prefer homemade cakes over the boxed kind anyways, but that can be our little secret! Here is the german chocolate cake recipe I use:
German Chocolate Cake
Ingredients:
- 1 (4 oz) package of German Sweet Chocolate
- 1/2 cup semisweet chocolate chips
- 1/2 cup half and half
- 2 cups sifted all purpose flour or cake flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup butter, at room temperature
- 3/4 cup white sugar
- 3/4 cup light brown sugar
- 4 eggs, seperated at room temperature
- 1 tsp vanilla extract
- 1 cup buttermilk or soured milk (1 cup milk with 2 tbls vinegar)
Directions:
- Preheat oven to 350 degrees F and grease the sides of 3 9-inch round pans and line bottoms with parchment paper.
- Break up chocolate squares and place them along with the semisweet chocolate chips and half and half in small saucepan on your stove top and melt on low heat, stirring constantly as to not scorch the chocolate.
- In a medium size bowl, sift together flour, baking soda, and salt.
- In a large size bowl, cream together butter, white sugar, and brown sugar until smooth and creamy. Add the egg yolks, one at a time, ensuring that each egg is well blended after each addition. Stir in chocolate mixture and vanilla extract. Add flour mixture alternately with buttermilk until well incorporated, but be careful to not to overmix.
- In another mixing bowl, beat egg whites until stiff peaks form. Gently fold into the batter and pour into the three prepared 9-inch round pans.
- Bake in preheated 350 degrees F oven for 30 minutes or until toothpick comes clean after being inserted down the center of the cake. Cool completely before frosting with Coconut Pecan Frosting.
Coconut Pecan Frosting
Ingredients:
- 1 cup heavy whipping cream
- 1/2 cup butter
- 1/2 cup confectioner’s sugar
- 1/2 cup light brown sugar
- 1/2 tsp cornstarch
- 1/4 tsp salt
- 3 egg yolks
- 1-1/2 cup flaked coconut, toasted
- 1 cup chopped pecans, toasted
- 1 tsp coconut extract
Directions:
In a medium size saucepan, whisk together heavy whipping cream , butter, confectioners sugar, brown sugar, salt, cornstarch, and egg yolks over medium heat. Bring to a boil and turn the heat to low and continue to stir constantly until thickened (about 15 minutes). Remove from the heat and stir in toasted coconut, pecans, and coconut extract. Cool to room temperature before frosting German Chocolate Cake. Frosting will set as it cools.

When I was little my mom used to make this cake. Everyone loved it and would always request it. I think my brother would ask for it all the time. She hasn’t made it in years!
